Instructions:

Prep: Wash the mushrooms, trim the roots, and slice them diagonally. Crack the eggs into a bowl, add a splash of fish sauce and pepper, and beat well.

Sauté the mushrooms: Heat oil in a pan and fry the minced shallots until fragrant. Add the mushrooms and stir-fry quickly over high heat. Season with a little bouillon powder.

Add the eggs: Once the mushrooms are tender, slowly pour the beaten eggs into the pan. Wait a few seconds for the eggs to slightly set, then gently stir so the eggs form fluffy chunks around the mushrooms rather than breaking into fine crumbs.

Finish: Once the eggs are fully cooked, turn off the heat. Garnish with chopped scallions, cilantro, and ground pepper. Toss gently and serve.
