Stir-fried Queen Mushrooms with Eggs

A simple, light, and easy dish for a family meal.

Ingredients:

  • Queen Mushrooms: 200g

  • Eggs: 2-3

  • Minced shallots

  • Scallions, cilantro

  • Seasonings: Fish sauce, bouillon powder, ground pepper, cooking oil.

Instructions:

  1. Prep: Wash the mushrooms, trim the roots, and slice them diagonally. Crack the eggs into a bowl, add a splash of fish sauce and pepper, and beat well.

  2. Sauté the mushrooms: Heat oil in a pan and fry the minced shallots until fragrant. Add the mushrooms and stir-fry quickly over high heat. Season with a little bouillon powder.

  3. Add the eggs: Once the mushrooms are tender, slowly pour the beaten eggs into the pan. Wait a few seconds for the eggs to slightly set, then gently stir so the eggs form fluffy chunks around the mushrooms rather than breaking into fine crumbs.

  4. Finish: Once the eggs are fully cooked, turn off the heat. Garnish with chopped scallions, cilantro, and ground pepper. Toss gently and serve.
